Chicory Flowers

Ahh - the blue eyed maiden - the chicory flower is a rare beauty - blooming in the morning and dying off at the end of the day. This flower is also known as "corn flower" or "coffee weed" - Of course the root is ground up and used in the traditional drink, the leaves are eaten by humans and grazed on by cows, and the French have been known to do something with the roots in the winter to produce white shoots for a salad named - Barbe de Capuchin.
